A quick and simple recipe for classic miso soup with scallions, tofu, and shiitake mushrooms.

What you need

cup firm tofu

cup water

tbsp white miso

scallion
Instructions
Add water and miso paste to a small pot and bring to a boil. Then simmer on low and add scallions. Stir and dissolve miso paste. Once dissolved after about a minute or two, add shiitakes and tofu and simmer for another couple minutes until mushrooms are cooked. Enjoy!View original recipe
