A delicious and easy recipe for roasted portobello mushroom caps topped with a fresh homemade basil and mint pesto.

What you need

bunch fresh mint
lemon

tbsp nutritional yeast

bunch fresh basil

cup olive oil

clove garlic clove
portobello mushrooms

tsp fine sea salt

tbsp pecorino
Instructions
Preheat oven to 425°F (220°C). Brush portobello caps with olive oil and season with sea salt. In a food processor or blender, add basil, mint, garlic, lemon juice, 1/4 cup olive oil, and blend until smooth. Season the pesto with salt and pepper to taste. Spoon the pesto evenly onto the portobello caps. Bake in the preheated oven for 20 minutes, or until bubbly. Remove from oven and enjoy!View original recipe
