Potato Spinach Bisque

What you need
lemon

spinach

bay leaves

celery

avocado oil

garlic

yellow onion

russet potato
Instructions
Place potatoes in large bowl with ice and cold water, let sit for 15 min to remove excess starch (this will prevent the soup from becoming too gummy). Heat large pot. Add oil, celery, bay leaf and onion, sauté until fragrant. Add strained potato. Then add water, bring to a boil, then simmer. Cover and let simmer for 15-20 min until potatoes are easily oierced with a fork. Remove bay leaf and blend 2/3 of the potatoes until smooth. Season with salt, pepper and lemon zest. Stir in spinach and leave on low heat until spinach wilts. Serve with freshly chopped dill!View original recipe
