Roasted Cabbage Steaks with Mustard Vinaigrette 🥬

What you need

tsp apple cider vinegar

tsp fine sea salt

head white cabbage
tsp grainy mustard

cup olive oil

tsp dijon mustard
Instructions
Preheat oven to 400°F. Trim the core and slice the cabbage into 1/2 inch “steaks”. Brush each steak with 1 tbsp olive oil, season with salt and pepper, and bake on a parchment-lined sheet for 30 minutes until tender and slightly browned. While the cabbage is roasting, combine the remaining olive oil, Dijon mustard, grainy mustard, apple cider vinegar, and salt and pepper in a bowl and whisk until creamy.
