The beauty of this recipe is you literally can use any veg on hand to top your tostada. I want to say the avo is key for a creamy base you can anchor all those leafy greens on. I didn’t have much but next time some thinly sliced radish, pickled cabba

What you need

cilantro

hot sauce

vegan mayonnaise

baby arugula

tomato

avocado

coarse sea salt
vegetable oil

corn tortilla
Instructions
Preheat oven or air fryer to 400. Lightly brush tortillas w oil on both sides and sprinkle salt. Place in air fryer or oven until crispy about 3-5 minutes (this time will vary so keep an eye on it!) spread avo smash onto tostadas with chipotle mayo, then tomato, then greens and cilantro.
