Sea’s Favorite Hearty Miso Stew

Nobody loves a brothy miso with tofu more than our little lady but wanted to pack it with a little more than your average for a heartier nutrient dense meal. This could live alone with leafy greens or with a side of toast and nutty brown rice if you like.

What you need

tbsp white miso

tsp ginger

clove garlic clove

tbsp rice vinegar

cup edamame

cup firm tofu

cup baby spinach

cup seaweed

tsp sesame seed

carrot

cup water

bunch scallion

dash cayenne

fresh ginger
Instructions
In a medium sized pot, add water and miso and bring to a boil, then robust simmer and use a wooden spoon to break down miso paste. Add tamari, rice vinegar, grated ginger and garlic then lower to true simmer and let simmer for another 5 minutes. Add rinsed, soaked arame or wakame, spinach, grated carrots, edamame beans and tofu. Let simmer for another 5 minutes and turn off heat. Ladle into bowls and garnish with scallions and sesame seeds. Optional: add a dash of togarashi or cayenne, or raw grated ginger on top.View original recipe
