Shroom “Noodles”

A piping hot, comforting and grounding dish served as a side or as the main event! Try to source “enoki” mushrooms at your local Asian mart to get the full effect or you can thinly slice portobello or king trumpet as a dupe!

What you need

tsp black pepper

bunch scallion

clove garlic clove

box enoki mushrooms

tsp fine sea salt

tbsp tamari

cup water

cup shiitake mushroom caps

dairy free butter
Instructions
Heat a pan and add butter or oil if using. Add garlic and sauté on medium high heat for 30 seconds until fragrant but not browned. Add mushrooms, and sauté on high heat, add 1/2 cup water to help cook down. Drizzle tamari. Continue to sauté lower to medium heat for about 5-6 minutes. Season with salt and a lot of black pepper.
