Super Greens Salad with Grilled Halloumi

This is the result of me getting nearly every vibrant veg at the farm stand and so glad I did! You can swap in anything you have on hand, the idea is keeping it fresh, local and seasonal.

What you need

kosher salt

tbsp zaatar
lemon

cheese

mint

cup olive oil

garlic

zucchini

bunch asparagus

bunch broccolini

cup snap peas

fennel

hot sauce

iceberg lettuce
Instructions
Heat a pan w garlic and oil, sauté broccolini, asparagus and zucchini for a few minutes until cooked yet firm. Set aside. On a hot grill pan, grill halloumi until charred on both sides, set aside. (Can bake in oven until soft as well!) Combine raw ingredients in large salad bowl. Top with cooked veg, cheese, mint and toss with dressing. Enjoy!View original recipe
