What you need

fl oz olive oil
cup sticky rice

tsp fine sea salt

cup greens

avocado

fl oz vegan mayonnaise

Instructions
Cook rice as directed, then let it cool. Spoon the cooked rice into a shallow bowl and press down so it evenly fills the bowl. Chop up the greens (kale, romaine, and Persian cucumber). In a separate bowl, toss the chopped greens with olive oil, lemon, and sea salt. Mash the avocado evenly on top of the rice in the shallow bowl. Top the mashed avocado with the dressed greens. Drizzle vegan spicy mayo generously on top. Use chopsticks to scoop the salad rice and avocado mixture onto a nori sheet and enjoy!View original recipe
