Veggie Fried Rice

This recipe was one of the original dishes I made for the kids when they first started having solids and I come back to it again and again! Can add kimchi to spike it up for the grownups!

What you need

salt

vegetable oil

sesame oil

soy sauce

ginger root

carrot

zucchini

baby spinach

garlic

yellow onion

broccoli

stew vegetables
sushi rice
Instructions
Place veggies into food processor and pulse until chopped very fine. Then add 1-2 tbsp avo oil to hot pan, add chopped veg, sauté 2 min, can add a little water to prevent from sticking. Add tamari, rice, mix well add 1 tsp sesame oil and season if needed. Serve with nori sheets or lettuce cups and enjoy!View original recipe
