Veggie Supreme Nachos

Honestly nachos anytime of year but especiallly on game day. These are veggie packed with nutrient dense goodness and plant protein, and they’re so good!

What you need

jalapeno

grape tomato
guacamole

cilantro

pickled jalapenos

mild cheddar

black olives

pinto beans

avocado oil

red onion

yellow squash

chard

corn tortilla chips

tortilla chips
Instructions
Preheat oven to 450. Spread chips onto parchment lined sheet pan. Massage veggies with avocado oil, garlic powder, onion powder and sea salt. Spread evenly over chips. Top with beans, pickled peppers, olives, sprinkle over cheese. Place in the oven under the broiler for 20 min until cheese is fully melted. Optional to broil for a few seconds to char the chips a bit. Top with fresh tomatoes, jalapeño, cilantro, lime and spoon guacamole in the middle. Enjoy!View original recipe
