Veggie Supreme Nachos!

Honestly nachos anytime of year but especiallly on game day. These are veggie packed with nutrient dense goodness and plant protein, and they’re so good!

What you need

tsp garlic powder

tbsp onion powder
lime

bunch cilantro

tbsp avocado oil

oz corn tortilla chips

cup shredded cheddar
cup fresh tomatoes

cup jalapeno

red onion

tsp fine sea salt

zucchini

bunch red chard

cup pinto beans

cup black olives

cup pickled jalapenos
Instructions
Preheat oven to 450°F. Spread chips onto a parchment-lined sheet pan. Massage veggies (red chard, zucchini, red onion) with avocado oil, garlic powder, onion powder, and sea salt. Spread the seasoned veggies evenly over the chips. Top with pinto beans, pickled peppers, and olives, then sprinkle over the cheese. Place in the oven under the broiler for 20 minutes until the cheese is fully melted. Optionally, broil for a few extra seconds to char the chips slightly. Top with fresh tomatoes, sliced jalapeño, cilantro, lime wedges, and spoon guacamole in the middle. Enjoy!View original recipe
