Rice Cake Tofu Scramble

My improv take on the Korean tradition of eating rice cakes on the New Year for the kiddos. A comfort food inspired by childhood memories, this dish features silken organic tofu, fresh vegetables, and Korean rice cakes.

What you need

carrot

zucchini

cup silken tofu

head broccoli

fl oz sesame oil

splash rice vinegar
tbsp tamari soy sauce

cup rice cake
Instructions
Heat a skillet with two tbsp Avo oil. Add veggies (chopped zucchini, chopped carrot, chopped broccoli) and sauté until tender with tamari, about 4 tbsp. Add tofu and scramble with veggies. Add in cooked rice cakes and a splash of rice vinegar. Drizzle with toasted sesame oil and serve!View original recipe
