Curried Coconut Noodles

Instagram might have been down but.. just in time for dinner!! 🍜🍜🍜 Curried Coconut Noodles. A quick and flavorful noodle dish with mung bean noodles, zucchini, bell peppers, broccolini, and a rich curried coconut sauce.

What you need

tsp chili oil
chili pepper

tsp ginger

oz bean thread noodles

tsp fine sea salt

bell pepper

zucchini

cup water

clove garlic clove

tbsp avocado oil
tbsp tamari soy sauce

cup grape tomato

bunch broccolini

can coconut milk
Instructions
Boil a pot of water, add noodles and hydrate for 2 min. Drain and set aside. Heat a pot, add oil, garlic and ginger. Sauté until fragrant. Add zucchini, then tamari and a little water and sauté until slightly browned, and 5 min. Add remaining vegetables, sauté for 3 min then add curry powder and continue to sauté on medium heat. Add coconut milk, and 1 cup of water. Bring to a boil, then simmer for 5 minutes. Turn off heat and mix in cooked noodles. Add chili crisp and stir. Serve hot!View original recipe
