Cauliflower Gnocchi Pesto

Isn’t the point of gnocchi fluffy, pillowy clouds of heaven? So I ignored everyone’s advice to crisp up in a pan and boiled for 7 minutes, flashed in cold water and the key in fact, is the sauce.

What you need

black peppercorn

salt

nutritional yeast

extra-virgin olive oil
lemon

garlic

mint

flat-leaf parsley

Instructions
Boil a pot of salted water. Boil gnocchi for 6-7 min. Strain gnocchi and toss in cold water and set aside. While pasta is boiling, blend pesto ingredients in food processor. Season as needed. Pesto should be slightly saltier than usual to counteract sweetness of gnocchi. Add cooked pasta and pesto in pot, toss over low heat until fully coated.
