What you need

cup basmati rice

ginger

cup water

oz coconut milk

tsp fine sea salt

tbsp avocado oil

clove garlic clove

onion

bunch fresh cilantro
Instructions
Rinse rice until water runs clear. Transfer to pot and toast for a couple minutes. Add water and bring to a boil, add coconut milk and lower heat to a simmer. Add a pinch of salt, ginger and garlic. Cover and simmer on low for 30 minutes, occasionally stirring so rice doesn’t stick to bottom. Rice is cooked when creamy and no bite to the rice. Remove from heat. In a separate pan, sauté onions with a little oil until caramelized. Add to pot and mix well. Add fresh herbs and toss into rice. Plate in bowls and serve!View original recipe
