What you need

bunch fresh parsley

clove garlic clove
tsp dried oregano

tbsp nutritional yeast

cup zucchini

cup broccoli florets

cup non-dairy milk

cup bell pepper

cup asparagus

cup tomato & basil sauce

tsp salt & pepper
cup fresh tomatoes

tbsp olive oil

box penne

cup pine nut

cup green peas
Instructions
Cook pasta as directed on box and set aside. In a large pan, heat olive oil, add sliced garlic. then add all veggies and saute, adding oregano, a little salt and pepper to season. Cook for about 5 minutes, adding a little water to help veggies cook down on a medium high heat. Add ZenB Sweet Carrot and Tomato sauce or Roasted Tomato Sauce and continue to saute on high. Add plant-based milk and nutritional yeast, and saute for another 3 minutes. Add cooked pasta into pan and mix well. Turn off heat and mix in chopped parsley, half of toasted pinenuts, red chili flakes if using and season with more salt and pepper if needed. Ladle into bowls and top with more parsley, pine nuts and chili flakes. Serve hot!View original recipe
