Hearts of Palm and Crispy Yuca Salad!

A fresh and vibrant salad featuring mixed greens, tender hearts of palm, creamy avocado, and crispy yuca (or potato/tortilla chips). It's dressed with a zesty vinaigrette made with quick-pickled shallots, apple cider vinegar, orange juice, olive oil, and Dijon mustard.

What you need

tsp freshly cracked black pepper

can palm hearts

avocado

bunch fresh dill

clove garlic clove

tsp fine sea salt

cup avocado oil

cup yuca

cup olive oil

cup apple cider vinegar

cup mixed greens
Instructions
Massage shaved yuca in avocado oil and a little sea salt. Bake at 400°F (200°C) until crispy or toss in an air fryer until crisp. Add vinegar to minced shallots and let sit for 15 minutes to quick pickle. Whisk together all dressing ingredients (quick-pickled shallots and vinegar, orange juice, olive oil, sea salt, black pepper, grated garlic, and Dijon mustard). Set aside. Toss greens, hearts of palm, and dill in a bowl. Toss in dressing, then add crunchy yuca and sliced avocado on top. Enjoy!View original recipe
