Smashed Greek Salad

There’s something abt the Greek salads in the summer, they’re so juicy and rich, this one takes it to the next level by literally smashing the cucumbers and squeezing those ripe tomatoes like lemons to make it the juiciest, most hydrating salad you might just wanna eat it with a spoon!

What you need

pinch salt

persian cucumber

head romaine lettuce

scallion

cup grape tomato

bunch fresh dill

pinch pepper

fl oz lemon juice

cup olive oil

tbsp capers

feta
Instructions
Cut Persian cucumbers into 1 inch cubes, then smash them with a mallet. Quarter grape tomatoes (or 2 large tomatoes). Thinly slice 1 scallion. Crumble 1 block of feta. Slice 1 head of romaine. Trim and blanch 1 bunch of green beans. For the dressing, combine 2 tbsp capers, 1/4 cup olive oil, freshly chopped dill, juice of 1 lemon, and salt and pepper, then whisk together. Combine all salad ingredients in a large bowl, squeezing tomatoes and their juice into the bowl. Pour the whisked dressing over the salad. Toss with tongs and transfer to a serving plate.
