Kiddo-Friendly Jap Chae! Aka Korean Sweet Potato Noodles 🍜🍜🍜 This is a Jr. version of the one I make for adults, the only diff is the way I cut the veg. As mom of two I’ve realized texture can make or break a meal so here you have it! Obv adult friendly too 😉☺️

What you need

sweet potato starch noodles

tbsp sesame oil

zucchini

cup broccoli florets

tsp ground ginger

yellow onion

cup baby spinach
tbsp tamari soy sauce

cup shiitake mushroom caps

carrot

tsp garlic
Instructions
In a large pot boil 6 cups water and simmer noodles for 5-8 min until soft. Strain and set aside. Add roughly cut veg to food processor and chop until fine. In a large pan, heat avocado oil. Add grated ginger and garlic. Add veg mixture and sauté until slightly tender but not too soft. Add tamari and sauté for two min. Add cooked noodles and toss so veggies are combined throughout. Off heat, drizzle sesame oil over the noodles and mix well. Serve!View original recipe
