What you need

cup vegan mayonnaise

bunch arugula

fl oz olive oil

bread

fennel bulb

tomato

yellow squash

zucchini

slice jalapeno

tsp salt & pepper

cucumber

clove garlic clove
Instructions
Preheat oven to 450. Rub squash in olive oil, salt, and pepper. Roast until browned. Toast bread and rub well with sliced garlic clove. Spread mustard and mayonnaise on the bread. Stack sandwich with cooked vegetables, raw vegetables, and arugula. Slice and enjoy!View original recipe
