What you need

white onion

tsp smoked paprika

bunch fresh basil

tsp ground cumin

can jackfruit

summer squash

dash chipotle powder

tsp onion powder

tbsp avocado oil

Instructions
For jackfruit: Preheat oven to 450°F (232°C). Massage spice rub (smoked paprika, onion powder, ground cumin, chipotle powder, sea salt, pepper) into the strained jackfruit and break it apart with your hands. Spread evenly on a baking sheet and bake for 15-20 minutes until browned. Taco Veg: Trim the ends of the summer squash. Slice zucchini lengthwise about 1/4 inch thick. Massage avocado oil, salt, and pepper into the slices. Heat a grill pan until smoking hot, then lower heat to medium and grill zucchini on both sides for a few minutes each side. Set aside. Green Goddess Dressing: Combine all dressing ingredients (basil, mint, olive oil, Dijon mustard, apple cider vinegar, vegan mayo or avocado, water, salt, pepper) in a food processor and pulse until creamy but still somewhat chunky. Pico topping: Combine minced white onion, chopped tomato, and lime juice. Assembly: Heat tortillas on an open flame until slightly charred. Schmear Green Goddess dressing on a tortilla, add grilled zucchini, a handful of roasted BBQ jackfruit, a little pico, and hot sauce. Enjoy!View original recipe
