Grain Free Vegan Pad Thai

The tamarind paste is key here to get that tart, punchy vase so essential in pad thai. Dulse gives it the fish sauce flavor and a ton of shredded veg gives it a light summery crunch!

What you need

lime

peanut

salt

onion

garlic

dulse

tbsp soy sauce

tbsp tamarind paste

cup coconut sugar
cup bean sprouts

tbsp vegetable oil

scallion

cup cherry tomato

cup fresh green beans

white mushrooms

carrot

zucchini

cup rice noodles
Instructions
Heat a large pan, add oil, garlic and onion. Sauté until fragrant. Remove mixture and set aside. In same pan, heat coconut sugar and water and stir until melted on a low heat careful not to burn. Add tamarind paste, tamari and dulse, continue to stir on low heat. Season well with salt as needed. You want to sauce to be salty. After 10 min, add in onion mixture and stir. Set aside. You could blend the sauce once cool or keep chunky. In same pan, heat oil, add green beans, carrots, tomatoes. Sauté for a couple minutes, add in cooked noodles. Add pad Thai sauce. Mix well. Add in mushrooms, zucchini noodles and bean sprouts. Toss well. Serve with peanuts, scallions and lime.View original recipe
