Grain Free Tacos! 🌮🌮🌮 2-4 collard green leaves 1 zucchini, thinly sliced 1/2 large white onion, thinly sliced 2 cloves garlic, minced 2 tbsp avocado oil 1/2 tsp smoked paprika 1/2 tsp garlic powder 1/2 tsp onion powder Dash of cumin Sea salt and pepper For crema: 1/2 block feta (sheep or vegan) or vegan mayo 1/4 cup water (if using feta) 2 cloves garlic 2-4 tbsp fave hot sauce For topping: 1/2 cup shaved white cabbage 1/2 cup halved cherry tomatoes Cilantro Squeeze fresh lime Optional: any protein of your choice (or) Avocado Rice Beans In a pan, heat oil, then add garlic. Sauté until fragrant. Then add zucchini and onion. Add seasoning and sauté until tender about 5 min. Set aside. In a food processor, add feta or mayo with water if using, garlic and blend until creamy. Set aside. Spread one spoon onto a collard green, add zucchini and onion, cabbage, cilantro, tomatoes and squeeze of lime. Enjoy!

1. In a pan, heat avocado oil. 2. Add the minced garlic and sauté until fragrant. 3. Add the thinly sliced zucchini and white onion. 4. Add smoked paprika, garlic powder, onion powder, cumin, sea salt, and pepper. 5. Sauté until the zucchini and onion are tender, about 5 minutes. Set aside. 6. For the crema: In a food processor, add the feta (or vegan mayo) and water (if using feta), along with the 2 cloves of garlic. 7. Blend until creamy. Set aside. 8. To assemble: Spread one spoonful of the prepared crema onto a collard green leaf. 9. Top with the sautéed zucchini and onion mixture. 10.
