A creamy, herbaceous, and delicious potato salad that's perfect for picnics or BBQs, made without mayo. A dollop of vegan or regular mayo can be added if desired.

pepper

celery

clove garlic clove

tbsp olive oil

tbsp dijon mustard

lb yukon gold

fl oz lemon juice

tbsp capers

bunch fresh parsley
Instructions
Scrub and boil potatoes in heavily salted water under tender and easy to spear with a fork. Let cool. Once cool, quarter and transfer to a bowl. Add chopped celery, herbs, garlic. Add Dijon, olive oil, lemon juice, capers and salt and pepper. Mix well, slightly mashing with your fork. Enjoy warm or cold!View original recipe
