What you need
tbsp dried oregano

tsp red pepper flake

oz pecorino romano

tsp fine sea salt

Instructions
Preheat oven to 425. Peel eggplant skin into zebra like exterior, skipping one inch every time. Then slice into 1/2 inch thick rounds. Transfer to baking sheet. Spoon a teaspoon of marinara into each slice and spread. Sprinkle cheese, marinara and seasoning. Bake until cheese is bubbly and slightly browned abt 25 min. Enjoy!View original recipe
