Dashi Poached Wild Salmon

The biggest note I get about wild salmon is that it’s dry and it’s hard to cook. This is my foolproof to way make it that is easy and melts in your mouth!

What you need

oz sesame seed
tbsp kombu

cup water
salmon fillet

in ginger

tbsp tamari

dried shiitake mushrooms

bunch baby bok choy

tsp sesame oil

bunch scallion
Instructions
Heat a pot with water. Add dashi ingredients (water, dried shiitake mushrooms, rinsed and scrubbed scallions, dried kombu, thinly sliced ginger knob, and 2-3 tbsp tamari) and bring to a boil. Then simmer and cover for about 30 minutes. Gently add the salmon filets into the water until fully covered. Cover and poach for about 10 minutes. Then add the baby bok choy and cover again for another 2-3 minutes. Transfer salmon and bok choy onto a shallow bowl. Cover with more broth from the pot. Top with 1 tbsp tamari, 1 tsp toasted sesame oil, chili oil, chili crisp, and sesame seeds. Enjoy!View original recipe
