Rainbow Chard and Honey Lime Shrimp Tacos

Rainbow chard is so fresh and in season right now I’ve been thinking kf ways to incorporate into my meals! These tacos were the perfect vehicle with slightly sweet honey lime shrimp and salty raw cheddar, trust me this combo is it!

What you need

jalapeno

vegan mayonnaise
lime
lemon

lb shrimp

corn tortilla

bunch chard
sprouts

fine sea salt

tbsp honey

tbsp extra-virgin olive oil

tbsp cilantro

cheddar cheese

juice

salt

hot sauce

garlic

tbsp avocado oil
Instructions
Preheat oven to 450. Toss shrimp in oil, honey, lime, cilantro, garlic and salt/pepper. Transfer to lined baking sheet and bake until done about 15 min. Set aside. While shrimp is cooking, sauté chard in oil, garlic and once wilted, add lemon juice and season with salt. Sprinkle grated cheese on tortillas, warm in oven until melted.
